Winter salad with beans,baby spinach and lemon zest

Ingredients:

  •  300 gr medium size beans
  • 1 red bell pepper finely chopped
  • 3 spring onions finely chopped
  • 60 gr baby spinach
  • 1 carrot grated
  • 30 gr dill finely chopped
  • 1 lemon juice & zest

For the dressing:

 

  • 6 tbs olive oil
  • 2 tbs lemon juice
  • sea salt & black pepper

Cooking instructions:

  • Soak the beans in cold water for 12 hours,drain them and boil them for about 1 hour and 30′
  • In a big bowl mix all the ingredients and the dressing except the lemon zest.
  • Refrigerate for 2 hours,then serve in a big plate,adding the lemon zest and a few olive oil drops

Baked beans with beef sausage and yoghurt

Ingredients:

  • 400 gr medium sized beans
  • 400 gr beef sausage with wine and thyme
  • 2 green peppers sliced
  • 1 red onion sliced
  • 2 garlic cloves
  • 2 tomatoes or 200 gr tomato paste
  • 250 ml. vegetable stock
  • 60 gr. chopped parsley
  • 200 gr. strained yoghurt
  • 4 t.s. olive oil
  • 1 pinch curry powder
  • Salt-Pepper

Cooking instructions: 

Soak the beans in cold water for 12 hours,then boil them until they become soft(usually 1 1/2 hour).Keep 100 ml of their water.

In a casserole heat the olive oil and cook the onions,garlic,peppers for 6-7′ in medium heat.Add the tomatoes,vegetable stock,bean juice,curry,salt and pepper and simmer for 15′.in the end of this procedure add the parsley.

Put the beans and the sauce in an oven tray,and add the sausage.Bake in a preheated oven(160 C) for 20′.

Serve in a plate,add  a big spoon of yoghurt and decorate with parsley leaves.
